Default First brisket

I've never cooked one before, so ya'll criticize away. I found a packer at Sam's and separated the point from the flat. I then used Lane's Ancho Espresso rub. Let it sit from 12 hours in the fridge and put it on the egg until it reached 197 internal temp. It took about 9 hours or so at 200-250 degrees.

Looks good man. I hate it when there's too much fat so that one looks great. Never had brisket other than well done?

Ive never smoked one but it looks great to me. as long as it was tender, flavorful and wasnt like chewing a piece of shoe leather id say you nailed it.

For sliced, that looks great. I like to cook it where it won't hold form when you slice it too. For that, I'll cook in tinfoil for about 12 hours then smoke it for 2 or 3.

I though it turned out well. Tastes great, and pulls apart with a little "spring". I'll definitely do another one.

Looks good. I've got one in the freezer that I will try here soon. Any particular reason you separated the flat and point? I was always told that splitting them before cooking can risk drying out.

I was reading one site that said do it. It said the meat in the flat is really too dense for the fat to really penetrate and that it mostly just runs off the side. This guy separates his to get more contact with the smoke and rub. I'm a rookie at brisket cooking too so I consulted Dr. Google, lol. I might leave them together the next time just to see.
