Default Chefs Choice 120

I'm a pretty decent knife sharpener but my wife bought me the Chefs Choice 120 3 Stage Diamond Sharpener this Christmas....Man this thing will sharpen a butter knife til it shaves.....it's not cheap at $120 but I highly recommend it. Money well spent.

I'll just bring my knives to your house and you can sharpen them while I fish.

I've spent that much money on a variety of sharpening stones. EZE Lap works best of all that I tried. It stays in the truck tool box.
An electric like you have would be great to keep at home.

This is soooo much easier and I hate to admit better than I can accomplish by hand. One thing most don't think about and I didn't either is that you have to learn how to use this as well.

Your angle is fixed so that's 90% of sharpening but you still have to be concerned with the speed that you draw through the harkened and the pressure you apply to the blade......I am literally asking friends and family to bring their knives over so I can sharpen them because I've done every knife in the house razor shaving sharp

I've got a Buck Washita Stone that I can sharpen my knives to surgical status in a minute.

But........ I tried to sharpen Boinks Gerbers with it and it didn't do squat to them........ Gerbers have always given me fits with a stone....... That's why I got rid of all my Gerbers years ago. Once they get dull........it's hard to get them back to razor status.

I sharpened my Gerber Gator and all of my Outdoor Edge knives first.....they will all shave now. I know what you mean on the Gerbers....these knives were DULL from me trying to sharpen them on stones and even carbide sharpeners.....this thing gets them razor sharp

No. 110 but you can use it without power. Just takes longer because the discs arent spinning.
