Cooked a steak last night. Turned out good. Didn't scorch it like everyone said I would. Wife's came out medium rare and she likes it very rare so I guess I did burn hers in her mind.
Gonna smoke a butt Friday I'm thinking. Never smoked one before. Any hints or pro tips?

Low and slow

Put a rub on the butt.

Use your plate setter for indirect heat. Cover it with aluminum foil and/or drip pan to keep the drippings from falling on it and being absorbed on it.

Slowly bring the temp up and stabilize at 225 degrees (or as close as possible to it).

Stick a thermometer in it, close the lid and let it cook until you hit 195 degrees internal temp. Prob take around 14 hours or so.

I'm no expert but my first turned out good by using Fatboys method. Didn't make sense to cook to such a high internal temp but that's what cooks out all the fat. Also, wrap it in foil and put it in a cooler or wrap in towels when done. You can throw some wood chunks in with the lump to make it smoke more. I prefer cherry because I have some from a tree I cut. I'm lazy so that's how I picked cherry over pecan or mesquite, etc.

I like to spray every so often with salt water.

They're hard to mess up
